The Origin of Japanese “Viking” Buffet Restaurants

The “viking” buffet style, allowing you to taste what you like as much as you like, was born at the Imperial Hotel and has been loved by guests for over 60 years through various improvements and renewals.

Introduction of Chinese and Japanese Cuisine

The restaurant reopened on Viking Day, August 1, 2023, to mark its 65th anniversary. The interior and furnishings were completely renewed to create a more luxurious and relaxed atmosphere. 
In addition to French cuisine, Chinese and Japanese cuisines have been newly introduced. These changes make the restaurant more enjoyable for a wider range of guests across generations.


The Chinese cuisine is supervised by Shigeyoshi Hata, long-time chef of Jasmine Garden at the Imperial Hotel, Osaka, and faithfully reproduces popular flavors.

Experience all Five Senses with an Interactive Buffet

Enjoy the interactive elements of this buffet where chefs slice roast beef right before your eyes, and you can make your own Peking duck by placing ingredients on the crepe and rolling it up yourself.
Soup dumplings and Taiwanese castella cakes served from wagons are announced with the sound of a bell.

The Imperial Viking Sal's Commitment to the SDGs

The Imperial Viking Sal is promoting four initiatives to further advance its commitment to the SDGs.

Goal 12: Ensure sustainable consumption and production patterns

(1) Since 2007, we have been drying discarded items on-site to use as fertilizer for vegetables. We purchase vegetables grown using this fertilizer and serve them at Sal.
(2) By introducing an order-style buffet, we are able to plan production to reduce excess production and waste.

Goal 14: Conserve and sustainably use the oceans, seas and marine resources

Some of the seafood used in our Acqua Pazza is certified by the Aquaculture Eco-Label. The Aquaculture Eco-Label is a system that guarantees that aquaculture operations are conducted in a way that protects the environment and ecosystems. This managed aquaculture approach prevents marine pollution and helps conserve marine resources for sustainable use.

Goal 7: Ensure access to affordable, reliable, sustainable, and modern energy

We use green power for lighting and air conditioning inside the restaurant. Green power refers to environmentally friendly power generated from renewable sources like solar, wind, and hydro, producing no CO2 emissions.
