16He studied in France for a year starting in 1997. He devoted himself to his studies at Hotel Le Bristol, Hotel du Cap-Eden-Roc, and Hotel Royal, and when he returned to Japan, he was appointed to the position of head of the cooking department, and then later became the Tokyo head chef. "I am motivated by my wish as a chef to create delicious cuisine," he says, "and my pride in working for the Imperial Hotel." In 2005, he was awarded the title of “Knight of the Order of Agricultural Merit” by the French Republic and the title of “Officer” in 2017. He promotes the appeal of French cuisine to a wide range of people. TANAKA
