41890: ThImperial GThe dining room (and sometimes ballroom) housed a serving pantry, equipped with steam tables, which kept the foods in its oblong copper containers warm. In front of the servers was a smaller counter, on the opposite side of which was space to line up dishes and plates.No materials have survived to tell us what the original kitchens of the Imperial Hotel were like. In the Meiji period (1868-1912) the hotel and its food preparation facilities were refurbished, expanded, and improved, time and time again. As the number of guest rooms grew, the kitchens had to expand to keep up.1
