Profile

Chef Voisin began his remarkable career as a chef at the age of fifteen.
He served under Gerard Boyer at Boyer Les Crayeres, one of the finest restaurants in France's Champagne region, before being appointed Chef at Les Crayeres.
Chef Voisin has presided in the kitchens of Les Saisons since 2005.

Truffle Pastry Inspired by Gêrard Boyer of Les Crayêres

A luxurious dish taught to Chef Thierry Voisin by his mentor for 16 years, French three-star chef Gérard Boyer that consists of a whole truffle coated with foie gras and baked inside a pastry wrap. The accompanying sauce perfectly balances and enhances the aroma that emerges the moment the knife cuts in.
