Truffle Pastry Inspired by Gêrard Boyer of Les Crayêres
This extravagant dish was taught to Chef Voisin by Gerard Boyer, the three Michelin-starred chef under whom he worked for sixteen years.
An entire truffle, topped with foie gras, is encased in pie pastry. The scent released when your knife penetrates the pastry is enhanced by a sauce in sublime balance.
